A traditional Finnish dish featuring succulent lamb roast with flavorful herbs, served with tender boiled potatoes.

Ingredients:

- 5 tablespoons rosemary
- 16 medium potatoes
- 1 crushed bay leaf
- 1500 g lamb roast
- 0.5 dl honey
- 5 g dried marjoram
- 0.5 teaspoon salt
- 1 teaspoon pepper mix
- 1 teaspoon mint

Instructions:

1. Rub the lamb roast with coarse salt and let it marinate in a cool place overnight.
2. Prepare a pit for cooking the roast, digging a hole in sandy soil.
3. In a bowl, mix honey, rosemary, dried marjoram, crushed bay leaf, salt, and pepper mix.
4. Rub the seasoning mixture onto the surface of the lamb roast.
5. Place the lamb roast in the prepared pit and cover it with earth or sand.
6. Let the roast cook for about 4-6 hours, until tender.
7. Boil the potatoes in salted water until soft.
8. Serve the rosvopaisti with the boiled potatoes and garnish with mint.
