A traditional Finnish Christmas dish, Rosolli is a colorful and flavorful salad made with various vegetables and sour cherries in a creamy dressing.

Ingredients

- 2 tart apples
- 1000 g Rosolli ingredients (beets, carrots, potatoes)
- 200 ml heavy cream
- 0.25 tsp sugar
- 2 tsp vinegar
- 1 onion (optional)

Instructions

1. Peel the apples, then cut them into wedges and dice them.
2. Layer the ingredients in serving glasses: alternately add the diced apples with the prepared beets, carrots, and potatoes.
3. If desired, finely chop the onion and add it to the mixture or leave it out.
4. In a bowl, whisk together the heavy cream, sugar, and vinegar until smooth to create the dressing.
5. Pour the dressing over the layered ingredients in the serving glasses.
6. Serve immediately or let it chill in the refrigerator for a while before serving.
