Easy Rosolli with Vegan Cream Sauce

Serving Size: 4 servings
Ingredients:
- 3 medium beets
- 3 medium potatoes
- 2 medium carrots
- 1 apple
- 100g frozen peas
- 100g capers
- Salt and pepper to taste
Sauce:
- 200ml plant-based cream
- 2 tbsp vegan mayonnaise
- 1 tbsp mustard
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions:
1. Boil the beets, potatoes, and carrots until tender. Allow to cool and peel.
2. Dice the beets, potatoes, carrots, and apple into small cubes.
3. In a bowl, combine the diced vegetables and apple. Add the peas and capers.
4. For the sauce, whip the plant-based cream and then mix in the vegan mayonnaise, mustard, and apple cider vinegar. Season with salt and pepper.
5. Pour the sauce over the salad and mix well.
6. Let it chill in the refrigerator for about 30 minutes before serving.
