A vibrant and refreshing salad made from potatoes, carrots, and beets, perfect for the festive table. Preparation Time: 30 minutes
Serving Size: 6-8 servings
Ingredients:
- 4-5 medium potatoes - 2-3 medium carrots
- 3-4 medium beets
- 1-2 apples
- 1 dl pickles
- 1 dl onion
- 1-2 tablespoons vinegar
- 1-2 tablespoons sugar
- Salt to taste
- Black pepper to taste
- 1 dl sour cream or mayonnaise (optional)
Instructions:
1. Boil the potatoes, carrots, and beets separately until tender. Allow to cool.2. Peel and dice the cooled vegetables into small cubes.
3. Chop the apple and pickles into small pieces.
4. In a large bowl, combine all the diced ingredients.
5. Season the mixture with vinegar, sugar, salt, and black pepper. Mix well.
6. If desired, add sour cream or mayonnaise and mix again.
7. Let the Rosolli marinate in the refrigerator for at least one hour before serving.
