These delicious vegetable patties are a perfect side dish or main course, great for both everyday meals and special occasions. Inspired by an old cooking book.Preparation Time: 30 minutes
Serving Size: 4-6 patties
Ingredients:
- 2 dl grated carrots
- 2 dl grated zucchini
- 1 dl finely chopped onion
- 1 dl rolled oats
- 1 dl all-purpose flour
- 1 dl vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 2 tbsp olive oil for frying
Instructions:
1. Grate the carrots and zucchini. Squeeze out any excess moisture.
2. In a bowl, mix all the grated ingredients: carrots, zucchini, onion, rolled oats, and flour.
3. Add the vegetable broth, salt, black pepper, and paprika powder. Stir until you have a smooth batter.
4. Heat the olive oil in a pan over medium heat.
5. Shape the batter into patties and fry them in the pan for about 4-5 minutes on each side, until they are beautifully golden brown.
6. Serve warm, for example with a salad or dip.
