Ingredients:

- 500 g beetroot
- 150 g feta cheese
- 50 g arugula
- 30 g walnuts
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste

Instructions:

1. Boil the beetroots in salted water for about 30-40 minutes until tender.
2. Allow the beetroots to cool, then peel and cut them into cubes or slices.
3. Toast the walnuts in a hot pan for about 5 minutes until golden brown.
4. In a bowl, mix together the olive oil, balsamic vinegar, salt, and pepper.
5. Add the beetroots, arugula, and crumbled feta cheese to the bowl.
6. Gently toss the salad to combine the ingredients.
7. Top with toasted walnuts just before serving.
