Ingredients:
- 800 g beef roast
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 medium carrots, sliced
- 1 red bell pepper, diced
- 400 ml Rioja wine
- 400 ml beef broth
- 1 bay leaf
- 1 tsp fresh rosemary, chopped
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a large casserole over medium heat. Add the beef roast and sear on all sides.
2. Add the onion and garlic to the casserole. Sauté until the onions are soft.
3. Add the carrots and bell pepper and cook for a few more minutes.
4. Pour in the Rioja wine and let it simmer for a few minutes to evaporate the alcohol.
5. Add beef broth, bay leaf, and rosemary. Season with salt and pepper.
6. Cover the casserole with a lid and simmer on low heat for about 1.5 hours, until the beef is tender.
7. Serve the braised beef with the sauce, accompanied by mashed potatoes or fresh vegetables.
