Delicious rice pudding arancini made from cold rice pudding, hiding an almond inside. These sweet bites are perfect for Christmas morning breakfast or as a dessert with applesauce. Preparation Time: 1 hour

Ingredients:
- About 3 dl cold rice pudding - Almonds (plain or licorice-flavored)
- 2 dl all-purpose flour
- 2 eggs
- 2 dl breadcrumbs
- Vegetable oil for frying
- Cinnamon sugar (1 tbsp cinnamon + 1-2 dl sugar)
- Applesauce for serving
Instructions:
1. Take about a tablespoon of rice pudding and shape it into flat discs. 2. Place an almond piece in the center of each disc and form into a ball, ensuring the almond is hidden inside.
3. Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
4. Roll each rice ball first in flour, then in the egg, and finally in the breadcrumbs.
5. Heat vegetable oil in a pan. Deep fry the rice balls until golden brown.
6. Remove the cooked balls and place them on paper towels to drain excess oil.
7. Mix cinnamon and sugar together and sprinkle over the balls.
8. Serve warm with applesauce.
