A traditional cake featuring an eight-egg base and delicious strawberry mousse filling, elegantly topped with marzipan and simple decorations.
Preparation Time: 1 hour (plus cooling and decorating)
Serving Size: 12

Ingredients:

- 8 eggs
- 2 dl sugar
- 2 dl all-purpose flour
- 1 dl potato flour
- 1 tsp baking powder
- 1 dl butter (melted)
Strawberry Mousse:
- 300 g fresh strawberries (pureed)
- 2 dl heavy cream
- 100 g mascarpone cheese
- 1 dl sugar
- 2 gelatin sheets
Decoration:
- Marzipan
- Optional: edible decorations

Instructions:

1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Whisk the eggs and sugar until fluffy. Gently fold in the flours and baking powder.
3. Pour the batter into the pan and bake in the oven for about 30-35 minutes, until the cake is cooked through. Allow the cake to cool.
4. Prepare the strawberry mousse: Soak the gelatin sheets in cold water. Puree the strawberries and mix with mascarpone and sugar.
5. Whip the heavy cream and fold it into the strawberry puree. Add the melted gelatin sheets and mix well.
6. Cut the cooled cake into three layers and fill with the strawberry mousse.
7. Cover the cake with marzipan and decorate as desired.
