A simple and delicious vegetable pasta that cooks quickly and is perfect for a weekend dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach leaves
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little pasta water.2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté for about 2-3 minutes until softened.
3. Add the bell pepper and cherry tomatoes, and cook for an additional 5-7 minutes until the tomatoes are soft.
4. Add the spinach to the skillet and stir until wilted. Season with salt and pepper.
5. Toss the cooked pasta into the skillet and mix well. If the pasta seems too dry, add a few tablespoons of the reserved pasta water.
6. Serve the pasta garnished with fresh basil and a sprinkle of Parmesan cheese if desired.
