A simple and delicious homemade ricotta cheese perfect for pastas, pastries, or salads.
Preparation Time: 60 minutes
Serving Size: Approximately 600 grams
Ingredients:
- 1 liter of milk
- 0.5 liters of cream
- 3 tablespoons of lemon juice or vinegar (acid)
- 1 teaspoon of salt
Instructions:
1. In a saucepan, heat the milk and cream until it is near boiling.
2. Add the acid (lemon juice or vinegar) and bring the mixture to a boil.
3. Remove the saucepan from the heat and stir for about 30 seconds.
4. Add the salt and stir for another 30 seconds.
5. Let the mixture sit for about 10-15 minutes to allow the cheese curds to form.
6. Strain the curds through a fine mesh strainer or cheesecloth to remove excess liquid.
7. Allow the ricotta to cool to room temperature, then use as desired.
