Ingredients:
- 400 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 onion
- 2 cloves of garlic
- 300 ml vegetable broth
- 200 ml heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a pot over medium heat. Add the onion and garlic, and sauté for about 5 minutes until soft.
4. Add the mushrooms to the pot and cook until they are tender and the moisture has evaporated, about 5-7 minutes.
5. Pour the vegetable broth over the mushroom mixture and let the soup simmer for about 10 minutes.
6. Stir in the heavy cream and mix well. Heat the soup for a short while but do not let it boil.
7. Season with salt and pepper. If desired, blend the soup with an immersion blender or in a regular blender until smooth.
8. Serve the soup hot and garnish with fresh parsley.
