A delicious Sierra Leonean dish that combines the creamy taste of peanut soup with the spicy aroma of grilled meat skewers. Perfect for summer meals! Preparation Time: 45 minutes

Ingredients
- Peanut Soup:- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 2 dl peanut butter
- 1 l vegetable broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp chili powder (or to taste)
- 1 tbsp lime juice
- Grilled Skewers:
- 500 g chicken breast
- 2 tbsp oil
- 2 tsp oregano
- 2 tsp chili powder
- 1 tsp salt
- 1 tsp black pepper
- Skewers
Instructions
1. Peanut Soup:- Peel and finely chop the onion and garlic. Sauté them in a pot with oil until soft.
- Add the chopped bell pepper and continue cooking for a few minutes.
- Stir in the peanut butter and mix well.
- Pour in the vegetable broth and stir. Let the soup simmer on low heat for about 20 minutes.
- Season with salt, pepper, chili powder, and lime juice. Mix well and serve hot.
2. Grilled Skewers:
- Cut the chicken breast into bite-sized pieces.
- In a bowl, mix oil, oregano, chili powder, salt, and pepper. Add the chicken pieces and mix well to coat.
- Thread the chicken onto the skewers.
- Grill the skewers on a hot grill for about 10-12 minutes, until the chicken is cooked through and has a nice grill color.
3. Serve the peanut soup alongside the grilled skewers. You can complement the meal with green rice and grilled bananas.
