A delicious pasta recipe inspired by Bernardo Costantino, blending flavors from South America and Europe. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (such as spaghetti or penne) - 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 red onion, chopped
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder (optional)
- 100 g fresh basil, chopped
- 50 g Parmesan cheese, grated
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve a bit of the cooking water. 2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped red onion, sautéing for about 2-3 minutes until softened.
3. Add the diced bell pepper and halved cherry tomatoes to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
4. Season the mixture with salt, black pepper, and chili powder (if using). Stir well.
5. Add the cooked pasta to the skillet and mix all the ingredients together. If necessary, add a little reserved cooking water to keep the pasta moist.
6. Remove the skillet from heat and stir in the chopped basil and grated Parmesan cheese.
7. Serve immediately and enjoy!
