Ingredients:
- 600 g potatoes
- 200 g carrots
- 150 g onion
- 200 g bell pepper
- 200 g ham or sausage
- 2 tbsp oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp parsley (fresh or dried)
- 4 eggs (optional)
Instructions:
1. Peel and dice the potatoes and carrots.
2. Boil the potato cubes in salted water for about 10 minutes until they are half-cooked. Drain and let cool.
3. Peel and chop the onion and bell pepper.
4. Cut the ham or sausage into cubes.
5. Heat the oil in a frying pan over medium heat. Add the onions and sauté until they are soft.
6. Add the carrots, potatoes, and bell pepper to the pan. Cook for about 10-15 minutes until the vegetables are golden brown.
7. Add the ham or sausage to the pan. Season with salt, black pepper, and parsley. Mix well and cook for a few more minutes.
8. If desired, fry the eggs separately and serve on top of the pyttipannu.
