A delicious and filling weekday dish made quickly from leftovers. This meal combines potatoes, meat, and vegetables into a tasty mix.

Ingredients:

- 500 g potatoes
- 300 g cooked meat (e.g., beef or pork)
- 1 onion
- 2 carrots
- 1 bell pepper
- 2 tablespoons oil
- Salt and pepper to taste
- Fresh parsley (optional)

Instructions:

1. Peel and cube the potatoes. Boil them in salted water for about 10 minutes until they are slightly tender. Drain.
2. Peel and chop the onion, carrots, and bell pepper.
3. Heat the oil in a frying pan and add the onion. Sauté the onion for a few minutes.
4. Add the carrots and bell pepper to the pan and cook for a moment.
5. Add the drained potatoes and cubed meat to the pan. Fry everything together until the potatoes are golden brown and crispy.
6. Season with salt and pepper. Serve with parsley if desired.
