Ingredients:
- 1 cup jasmine rice - 2 cups water
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 carrot, sliced thin
- ½ cup green peas
- 7 oz tofu, diced
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper to taste
Instructions:
1. Rinse jasmine rice under cold water until the water runs clear.2. Cook the rice in water in a pot over low heat for about 15 minutes until the water is absorbed and the rice is tender.
3. Heat sesame oil in a large skillet over medium heat. Add garlic and ginger, sauté for about a minute.
4. Add the bell peppers, carrot, and peas to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
5. Add the tofu to the skillet and cook until golden brown.
6. Add the cooked rice to the skillet and mix well. Season with soy sauce, salt, and pepper.
7. Sprinkle fresh cilantro on top before serving.
