Ingredients:
- 400 g reindeer fillet - 200 g wild mushrooms (e.g., chanterelles or funnel chanterelles)
- 150 g potatoes
- 100 g cream
- 2 tbsp butter
- 1 onion
- 2 dl beef broth
- Salt and black pepper to taste
- Fresh herbs (e.g., thyme or rosemary)
Instructions:
1. Peel and dice the potatoes into cubes. Boil them in salted water for about 15 minutes until tender.2. Heat butter in a pan and add chopped onion. Sauté the onion until soft.
3. Add the wild mushrooms to the pan and cook until they are done. Season with salt and pepper.
4. Remove the mushrooms and quickly sear the reindeer fillet in the pan on both sides until beautifully browned. Cook on low heat for a few more minutes until the meat reaches your desired doneness.
5. Pour in the beef broth and cream, and bring to a boil. Let the sauce simmer on low heat for a few minutes.
6. Drain the cooked potatoes and mash them. You may add a bit of butter and salt to taste.
7. Serve the reindeer fillet, mushroom mixture, and mashed potatoes together. Finish the dish with fresh herbs.
