This delicious and hearty chicken stew combines rustic French flavors and is perfect for enjoying with friends.

Ingredients:

- 800 g chicken thighs, cut into pieces
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 3 large carrots, sliced
- 200 g mushrooms, sliced
- 400 g crushed tomatoes
- 2 dl chicken or vegetable broth
- 1 dl white wine
- 2 tbsp fresh thyme, chopped
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the chicken pieces and brown them until golden.
2. Add the onion and garlic, sautéing until the onion is soft.
3. Stir in the carrots and mushrooms, cooking for a few more minutes.
4. Pour in the crushed tomatoes, broth, and white wine. Mix well.
5. Add the thyme, bay leaves, salt, and pepper. Bring the mixture to a boil, then reduce the heat and cover the pot.
6. Let the stew simmer on low heat for about 40 minutes or until the chicken is cooked through and the flavors meld together.
7. Remove the bay leaves before serving and garnish with fresh parsley.
