Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and keep warm.
2. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sautéing for about 2-3 minutes.
3. Add the diced bell pepper and sliced zucchini to the skillet. Cook for about 5-7 minutes until the vegetables soften.
4. Stir in the halved cherry tomatoes and dried oregano. Season with salt and pepper. Cook for an additional 3-4 minutes.
5. Mix the cooked pasta into the vegetable mixture and heat everything together for a short while.
6. Serve with fresh basil and grated Parmesan cheese if desired.
