Ingredients:
- 300 g pasta (e.g., tagliatelle or penne)
- 250 g fresh mushrooms (e.g., chanterelles or button mushrooms)
- 2 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 250 ml heavy cream
- 50 g grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Peel and chop the onion and garlic. Clean and slice the mushrooms.
3. Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until soft.
4. Add the garlic and mushrooms to the pan. Cook until the mushrooms are golden brown and the liquid has evaporated.
5. Pour the cream over the mushroom mixture and stir well. Let it simmer on low heat for about 5-10 minutes until the sauce thickens slightly.
6. Combine the cooked pasta with the mushroom sauce. If the sauce is too thick, add a bit of the reserved cooking water.
7. Season with salt and black pepper. Finally, stir in the grated Parmesan cheese.
8. Serve the pasta garnished with fresh parsley.
