A delicious and easy snack, perfect for coffee time or as a quick treat. Preparation Time: 30 minutes
Serving Size: 20 cookies
Ingredients
- 2 tsp baking powder - 2 tsp vanilla sugar
- 1 dl all-purpose flour
- 1 dl brown sugar
- 1 tsp salt
- 3.5 dl rolled oats
- 1 dl granulated sugar
- 150 g butter or margarine
- 1.5 dl shredded coconut
- 1 egg
Instructions
1. Preheat the oven to 175°C (350°F). 2. In a bowl, mix the dry ingredients: baking powder, vanilla sugar, flour, brown sugar, salt, and rolled oats.
3. In another bowl, cream the softened butter (or margarine) with the granulated sugar until well combined.
4. Add the egg and beat vigorously until mixed.
5. Gradually stir the dry ingredients into the butter mixture.
6. Fold in the shredded coconut until the dough is smooth.
7. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
8. Bake in the oven for about 10-12 minutes, or until the cookies are golden brown.
9. Allow to cool before serving.
