A delicious French fish soup that brings the flavors of Southern France right to your kitchen. Preparation time is about 40 minutes and serves 4.

Ingredients:

- 500 g white fish (e.g. cod or pikeperch)
- 200 g shrimp
- 1 onion
- 2 garlic cloves
- 2 potatoes
- 2 carrots
- 1 red bell pepper
- 1 liter fish stock
- 100 ml white wine
- 1 tsp saffron
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp thyme
- 2 tbsp olive oil
- Fresh parsley for garnish

Instructions:

1. Peel and chop the onion, garlic, potatoes, carrots, and bell pepper.
2. Heat the olive oil in a large pot and add the onion and garlic. Sauté until soft.
3. Add the potatoes, carrots, and bell pepper to the pot. Cook for a few minutes.
4. Pour in the fish stock and white wine. Add saffron, salt, black pepper, and thyme. Let it simmer for about 15 minutes.
5. Add the fish and shrimp to the soup. Cook for another 5-7 minutes until the fish is cooked through.
6. Serve the hot soup with fresh parsley on top.
