French Fish Soup with Rouille

A delicious and hearty French fish soup that combines various fish and spices, creating a Mediterranean flavor experience. The dish is topped with homemade rouille for added depth. Preparation Time: 45 minutes

Ingredients:
- 1 tbsp breadcrumbs - 2½ dl water
- Black pepper, to taste
- 1 bay leaf
- 1 dl crushed tomatoes
- 250 g salmon fillet
- 3-4 garlic cloves
- 1 dried red chili (seeds removed)
- 2 crushed garlic cloves
- 2 egg yolks
- 1 can of mussels in water
- 250 g peeled shrimp
- 2-3 tbsp lobster stock
- 250 g pike/perch fillet
Instructions:
1. In a pot, heat the water, add the bay leaf, crushed tomatoes, and black pepper. Let it simmer on low heat. 2. Add the salmon fillet, pike/perch fillets, mussels, and shrimp to the soup. Allow to cook for about 10-15 minutes.
3. Meanwhile, prepare the rouille: In a bowl, mix the crushed garlic and chili. Add the egg yolks and breadcrumbs, and mix well.
4. Remove the soup from heat and discard the bay leaf. Serve the soup in bowls and top with the rouille.
