A delicious and easy recipe that combines the neutral flavor of Quorn with the creaminess of coconut. Perfect for a vegetarian diet and an ideal weeknight meal.

Serving Size: 4 servings
Ingredients:
- 300 g Quorn minced meat
- 1 can (400 ml) coconut milk
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 1 green bell pepper
- 2 tbsp curry powder
- 1 tbsp oil
- Salt and pepper to taste
- Fresh coriander for garnish (optional)
Instructions:
1. Peel and finely chop the onion and garlic. Heat the oil in a skillet over medium heat and add the onion and garlic. Sauté until they are soft.
2. Add the chopped bell peppers to the skillet and cook for a few minutes until they start to soften.
3. Stir in the Quorn minced meat and curry powder. Mix well and cook for about 5 minutes.
4. Pour in the coconut milk and stir all the ingredients together. Let the sauce simmer on low heat for about 10 minutes.
5. Season with salt and pepper to taste. Serve warm with rice or noodles. Garnish with fresh coriander if desired.
