A delicious and nutritious meatless option using Quorn mince. This quick bolognese sauce is perfect for pasta dishes. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g Quorn mince- 200 g pasta (such as spaghetti or penne)
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, peeled and diced
- 1 red bell pepper, diced
- 400 g crushed tomatoes
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and keep warm.2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic, carrot, and bell pepper. Cook for a few minutes until vegetables start to soften.
4. Stir in the Quorn mince and cook for about 5 minutes until heated through.
5. Pour in the crushed tomatoes and season with oregano, salt, and black pepper. Mix well and let simmer on low heat for about 10 minutes.
6. Combine the sauce with the cooked pasta and mix thoroughly. Serve garnished with fresh basil.
