Ingredients:
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sesame seeds (optional)
- Cooked rice or noodles for serving
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
3. Add sliced bell pepper, broccoli florets, snap peas, and julienned carrot. Stir-fry for about 5-7 minutes until vegetables are tender but still crisp.
4. Pour in soy sauce and sesame oil, stirring to coat the vegetables evenly. Cook for an additional 2 minutes.
5. Remove from heat and sprinkle with sesame seeds if using.
6. Serve the stir-fry over cooked rice or noodles. Enjoy!
