Ingredients:
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 2 carrots, julienned
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Cooked rice or noodles, for serving
Instructions:
1. Heat olive oil in a large skillet or wok over medium heat.
2. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
3. Add broccoli, bell peppers, snap peas, and carrots to the skillet. Stir-fry for 5-7 minutes until vegetables are tender but still crisp.
4. Pour in the soy sauce and toss to coat the vegetables evenly. Cook for an additional 2 minutes.
5. Serve warm over cooked rice or noodles.
