Ingredients:
- 200 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 100 g cherry tomatoes, halved
- 100 g fresh spinach
- Salt and pepper to taste
- 30 g grated Parmesan cheese
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve a little cooking water.
2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté for about a minute.
3. Add the halved cherry tomatoes to the pan and cook for 3-4 minutes until they soften.
4. Add the fresh spinach and stir until wilted.
5. Combine the cooked pasta with the contents of the pan and mix well. If the pasta feels dry, add a little reserved cooking water.
6. Season with salt and pepper. Serve topped with grated Parmesan cheese and fresh basil.
