A classic French tart filled with plenty of bacon and cheese, perfect for celebrations and delicious served warm or cold.
Preparation Time: 1 hour
Serving Size: 8-10

Ingredients

Dough:
- 150 g butter
- 4 dl all-purpose flour
- 1/4 tsp salt
- 1 egg
- 1/4 dl cold water
Filling:
- 140 g bacon, chopped
- 1 leek, sliced (about 5 dl)
- 1 onion, finely chopped
- 200 g grated cheese (Gruyère)
- 3 eggs
- 2 dl heavy cream
- 2 dl sour cream
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/2 tsp black pepper, freshly ground
- 1/2 dl chopped parsley

Instructions

1. Grease a tart pan (24-26 cm).
2. Sift the flour and salt into a bowl. Make a well in the center and add the water and egg. Mix quickly.
3. Add the cold butter in small pieces to the dough. Gently mix without kneading. Press the dough into the pan and prick the bottom with a fork.
4. Chill the dough in the refrigerator for 10 minutes. Pre-bake at 180°C (350°F) for about 5 minutes.
5. Cook the bacon in a frying pan. Slice the leek and sauté with the onion in oil until softened.
6. Spread the bacon and onion mixture over the tart base.
7. Combine the sour cream, heavy cream, eggs, spices, and parsley. Pour the mixture over the filling and sprinkle the grated cheese on top.
8. Bake in the oven on the lower rack (or center for convection ovens) at 180°C (350°F) for about 30 minutes.
