A delicious mix of grilled vegetables, perfect as a side dish or a light main course. Preparation Time: 25 minutes
Serving Size: 4 servings
Ingredients:
- 1 zucchini - 1 bell pepper (preferably red or yellow)
- 1 red onion
- 200 g cherry tomatoes
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1/2 tsp garlic powder
Instructions:
1. Rinse and chop the zucchini, bell pepper, and red onion into bite-sized pieces. 2. Halve the cherry tomatoes.
3. In a bowl, mix all the vegetables with olive oil, salt, black pepper, oregano, and garlic powder.
4. Transfer the vegetables to a microwave-safe dish suitable for grilling and grill for 15-20 minutes until soft and nicely colored. If using a skillet, heat it over medium heat and sauté the vegetables for about 10-15 minutes until cooked through.
5. Serve warm.
