A colorful and flavorful vegetable stir-fry packed with nutrition, perfect for a quick meal. Preparation Time: 25 minutes
Serving Size: 4 servings
Ingredients:
- 2 carrots, peeled and chopped
- 1 cup green beans or peas
- 1 parsnip, peeled and chopped
- 1 bell pepper, chopped
- 1 onion, sliced
- 1 piece of ginger, grated
- 1 can (400g) crushed tomatoes
- 1 tsp five-spice powder
- 1 tsp sugar
- 1 tsp Cajun seasoning
- A splash of soy sauce
- 2 tbsp all-purpose flour
- 1/2 cup water
- 2 tbsp canola oil for cooking
Instructions:
1. Heat canola oil in a wok over medium heat.
2. Add onion and ginger, sauté until the onion becomes translucent.
3. Add chopped carrots and parsnip, stir-fry for about 5 minutes.
4. Add green beans or peas and bell pepper, continue stir-frying for an additional 3-4 minutes.
5. Pour in the crushed tomatoes and mix well.
6. Season with five-spice powder, sugar, and Cajun seasoning. Add a splash of soy sauce.
7. In a small bowl, mix the flour with water until smooth, then add to the wok to thicken the sauce.
8. Cook for a few more minutes until everything is well combined and heated through.
9. Serve warm over rice or noodles.
