Ingredients:
- 1 cucumber
- 1 zucchini
- 2 carrots
- 1 onion
- 1 bell pepper
- Fresh herbs (such as basil or thyme)
- 2 cups water
- 1 cup vinegar (such as apple cider vinegar)
- 2 tablespoons sugar
- A pinch of salt
Instructions:
1. Slice the cucumber, zucchini, and carrots into thin rounds.
2. Julienne the onion and bell pepper, removing seeds and membranes.
3. Layer the sliced ingredients into a glass jar, adding fresh herb leaves or small sprigs in between the layers.
4. Prepare the brine: In a saucepan, combine water, vinegar, sugar, and a pinch of salt. Heat until the sugar dissolves.
