Serving Size: 1 jar
Ingredients:
- Celery stalks
- Pickling Brine:
- 1 part white vinegar
- 2 parts sugar
- 3 parts water
Instructions:
1. Trim the ends off the celery and rinse the stalks. Slice them into half-inch thick pieces.
2. Pack the celery slices into a clean glass jar.
3. In a saucepan, bring the pickling brine to a boil by mixing the white vinegar, sugar, and water. Stir until the sugar dissolves.
4. Pour the hot brine over the celery slices in the jar.
5. Seal the lid and let it cool at room temperature.
6. Place the jar in the refrigerator and allow the celery to marinate for at least one week, preferably two.
7. An opened jar will keep in the refrigerator for at least a month, using a clean spoon each time.
