Ingredients:
- 2 celery stalks - 1 onion
- 1 large celeriac
- 2 green apples (Granny Smith), peeled and chopped
- 4 tablespoons olive oil
- Salt or soy sauce, to taste
- 1½ tablespoons spices (e.g., Ethiopian Berbere spice mix, ½ tablespoon curry powder + a pinch of turmeric)
- Fresh herbs for garnish (cilantro or parsley)
- 2 liters boiling water
Instructions:
1. Finely chop the onion and cut the celery stalks into pieces. Peel the celeriac and chop it into small cubes. 2. Heat the olive oil in a pot and sauté the onion until translucent.
3. Add the chopped celery and spices. Stir the mixture for about 8 minutes until the ingredients soften.
4. Add the celeriac cubes and apple pieces. Lower the heat, cover the pot, and let it simmer gently for about 30 minutes.
5. Pour the boiling water into the pot, add salt or soy sauce, and let the soup cook covered for another 30 minutes.
6. Blend the soup with an immersion blender and serve garnished with herbs.
