A delicious celery root dish that makes a perfect side or spread for bread. The browned butter and thyme add a wonderful flavor.

Ingredients:

- 1 celery root (about 400g after peeling)
- 2½ tablespoons olive oil
- 6 garlic cloves
- 2 sprigs fresh thyme (or 1-2 teaspoons dried thyme)
- 1 ¼ teaspoons salt
- 10g (2 teaspoons) butter
- 100ml yogurt

Instructions:

1. Peel and dice the celery root.
2. Heat the olive oil in a heavy-bottomed pot. Add the diced celery root, peeled garlic cloves, thyme sprigs, and salt.
3. Sauté the cubes over high heat for 5-6 minutes until they start to color.
4. Reduce the heat and cook the cubes until tender (about 10 minutes). Add water if needed to prevent sticking.
5. Transfer the cooked celery root and garlic to a bowl and remove the thyme sprigs. Add dried thyme if desired.
6. In the same pan, melt the butter over high heat until golden brown and nutty in aroma. Pour the browned butter over the celery root mixture.
7. Add the yogurt and blend with an immersion blender or food processor until slightly chunky but not completely smooth. Leave small pieces for texture.
8. Serve warm or at room temperature. Store in the refrigerator for 2-3 days.
