Summer Vegetable Soup (Puutarhurin kesäkeitto)

A refreshing and vibrant summer soup packed with fresh vegetables. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 liter of early potatoes
- 0.5 liter of carrots
- 0.5 liter of cauliflower
- 0.5 liter of sugar snap peas
- 2 small summer onions
- 50 grams of butter
- 1 liter of water
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the early potatoes, carrots, and summer onions.
2. Cut the cauliflower into florets and trim the sugar snap peas.
3. In a pot, melt the butter and sauté the summer onions until soft.
4. Add the water, early potatoes, and carrots to the pot. Cook for about 10 minutes.
5. Stir in the cauliflower and sugar snap peas, and cook for an additional 5-10 minutes until all the vegetables are tender.
6. Season with salt and pepper to taste.
7. Serve the soup hot, garnished with fresh parsley.
