Mini Spinach Pizzas
Mini Spinach Pizzas
recipe
These green mini pizzas are perfect for autumn gatherings or a light dinner. The dough yields about 15 bite-sized pizzas. Preparation Time: 1 hour 30 minutes
Serving Size: 15 pieces
Ingredients:
- Dough:
- 2 cups all-purpose flour
- 1 packet dry yeast
- ½ teaspoon salt
- ¾ cup warm water
- 3 tablespoons vegetable oil
- Topping:
- Swiss chard pesto
- Soy cheese (e.g., Tofutti)
- (Tabasco sauce, optional)
- Swiss Chard Pesto:
- About 5 cups Swiss chard leaves
- 1 bunch oregano
- 1 cup sesame seeds
- 1 cup olive oil
- 3-4 garlic cloves
- Salt to taste
- Ground black pepper to taste
Instructions:
1. In a bowl, mix the dry ingredients for the dough (flour, yeast, and salt) together.
2. Add warm water and vegetable oil to the mix. Knead the dough until it forms a ball.
3. Cover the dough and let it rise for at least one hour.
4. To make the Swiss chard pesto: sauté the sliced garlic in a little oil until golden.
5. Coarsely grind the sesame seeds in a blender. Add the sautéed garlic, Swiss chard leaves, oregano, oil, salt, and black pepper. Blend until smooth.
6. Divide the dough into small balls and flatten them into mini pizza bases.
7. Spoon a generous teaspoon of Swiss chard pesto on each mini pizza. Optionally, add a dash of Tabasco sauce and top with soy cheese.
8. Bake at 450°F (225°C) for about 10-15 minutes, until the pizzas are golden brown.
