Ingredients:
- 500 g chicken breast fillets
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bell pepper (red or yellow)
- 1 zucchini
- 200 g cherry tomatoes
- 100 ml cooking cream
- 100 g grated cheese (e.g., mozzarella or Emmental)
- Fresh basil (for garnish)
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Cut the chicken breast fillets into strips and season with salt and black pepper.
3. Heat the olive oil in a frying pan and cook the chicken strips for about 5-7 minutes until cooked through.
4. Slice the bell pepper and zucchini, then add them to the pan with the chicken. Cook for a few more minutes until the vegetables soften.
5. Add the cherry tomatoes and cooking cream to the pan. Mix well and let simmer for a few minutes.
6. Pour the mixture into a baking dish and sprinkle grated cheese on top.
7. Bake in the oven for about 15-20 minutes until the cheese is golden brown.
8. Garnish with fresh basil before serving.
