A delightful and easy peach curd tart, perfect for coffee breaks or dessert.
Preparation Time: 45 minutes
Serving Size: 8-10 servings
Ingredients:
- 1 package of shortcrust pastry (400g)
- 1 cup of quark (or cottage cheese)
- 2 dl heavy cream
- 3 eggs
- Zest of 1 lemon
- ½ cup of sugar
- 1 can of peaches (approx. 400g)
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Roll out the shortcrust pastry and line a tart pan with it.
3. Prick the pastry base with a fork and pre-bake in the oven for about 10 minutes.
4. In a bowl, mix together the quark, heavy cream, eggs, lemon zest, and sugar until smooth.
5. Pour the mixture over the pre-baked pastry base.
6. Drain the peaches and arrange them on top of the filling.
7. Bake the tart in the oven for about 30-35 minutes or until the filling is set.
8. Allow to cool before serving.
