Creamy Spinach Soup

A delicious and nutritious dish perfect as a starter or a light main course. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g fresh spinach
- 1 medium onion
- 2 garlic cloves
- 1 tbsp butter
- 4 dl vegetable broth
- 2 dl cream
- Salt and black pepper to taste
- 1 tsp lemon juice
Instructions:
1. Finely chop the onion and garlic.
2. Melt the butter in a pot over medium heat. Add the onion and garlic, and sauté for about 5 minutes until soft.
3. Add the washed and torn spinach to the pot and cook until wilted.
4. Pour in the vegetable broth and let the soup simmer for about 10 minutes.
5. Remove the pot from the heat and blend the soup using an immersion blender or a regular blender until completely smooth.
6. Return the soup to the stove and add the cream. Gently heat the soup, but do not boil.
7. Season with salt, black pepper, and lemon juice. Serve warm.
