Ingredients:
- 2 zucchinis - 1 bell pepper (any color)
- 1 red onion
- 200 g cherry tomatoes
- 1 cup fresh herbs (such as basil and parsley)
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Rinse and chop the zucchinis, bell pepper, and red onion into small pieces. 2. Halve the cherry tomatoes.
3. Heat the olive oil in a large skillet over medium heat.
4. Add the red onion first and sauté for a few minutes until it becomes translucent.
5. Then, add the zucchinis and bell pepper, cooking for about 5-7 minutes until the vegetables are tender.
6. Stir in the cherry tomatoes and cook for a few more minutes.
7. Season with salt and pepper, then add the chopped herbs and mix well.
8. Serve warm as a side dish or main course.
