A refreshing and nutritious red cabbage and carrot salad that is quick and easy to prepare. Perfect as a side dish or a light main course. Preparation Time: 15 minutes

Ingredients:
- 1 tablespoon soy oil
- 1 tablespoon rice vinegar
- 1 carrot
- 300 g peanuts
- Red cabbage (amount to taste)
- 1 clove garlic
- 1 tablespoon sesame oil
- Fish sauce (to taste)
Instructions:
1. Slice the red cabbage into very thin strips.
2. Grate the carrot and finely chop the garlic clove.
3. In a bowl, mix together the soy oil, rice vinegar, sesame oil, and fish sauce.
4. Chop the peanuts into coarse pieces.
5. Combine all ingredients in a large bowl and enjoy.
