These beautiful red meatballs are flavored with sweet beetroot and delicious goat cheese. They make a perfect side dish or main course.

Ingredients:

- 400 g ground beef
- 1 medium beetroot (grated)
- 100 g goat cheese (crumbled)
- 1 small onion (finely chopped)
- 1 egg
- 2 tbsp breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 2 tbsp olive oil (for frying)

Instructions:

1. Peel and grate the beetroot. Finely chop the onion.
2. In a large bowl, combine the ground beef, grated beetroot, goat cheese, onion, egg, breadcrumbs, salt, black pepper, and oregano. Mix well.
3. Shape the mixture into small balls.
4. Heat olive oil in a pan over medium heat. Fry the meatballs for about 5-7 minutes, until they are beautifully golden brown and cooked through.
5. Serve warm, for example with a salad or mashed potatoes.
