Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 200 g green beans, chopped
- 400 g crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh basil for garnish
Instructions:
1. Heat the olive oil in a large pan over medium heat.
2. Add the onion and garlic, sauté for about 3-4 minutes until soft.
3. Add the carrots and bell pepper, and cook for an additional 5 minutes.
4. Stir in the zucchini and green beans, mixing well.
5. Pour in the crushed tomatoes and season with oregano, salt, and black pepper.
6. Allow the stew to simmer on low heat for about 20-30 minutes until the vegetables are tender.
7. Serve warm, garnished with fresh basil.
