A spicy tomato jam that adds a kick to your dishes. Preparation Time: 1 hour
Serving Size: Makes about 4 cups
Ingredients:
- 1 kg ripe tomatoes
- 300 g sugar
- 2 dl apple cider vinegar
- 2-3 garlic cloves
- 1-2 red chilies (to taste)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp cumin
Instructions:
1. Rinse the tomatoes and chop them into small cubes.
2. Peel and finely chop the garlic. Remove the seeds from the chilies and chop them.
3. In a pot, combine the tomatoes, sugar, apple cider vinegar, garlic, chili, salt, black pepper, cinnamon, ginger, and cumin.
4. Heat the mixture over low heat, stirring until the sugar dissolves.
5. Increase the heat and simmer the mixture for about 30-40 minutes, until the jam thickens.
6. Pour the hot jam into clean jars and seal with lids.
7. Allow to cool and store in the refrigerator. Serve on bread or as a condiment for grilled foods.
