Gluten-Free Pullakranssi (Sweet Finnish Ring)

A delicious gluten-free pullakranssi, perfect for a sweet treat at your coffee table. Soft dough and a spiced filling make it a delightful choice. Preparation Time: 1 hour 15 minutes
Serving Size: 1 ring
Ingredients:
- 25 g yeast - 50 g butter
- 2.5 dl milk
- 1/4 tsp salt
- 1/2 tsp ground cardamom or 3/4 tsp powdered cardamom
- 1/2 dl sugar
- 7 dl gluten-free flour
Filling:
- 50 g butter
- 2 tbsp sugar
- 1 tsp cinnamon
For Egg Wash:
- 1 egg
For Topping:
- Pearl sugar
Instructions:
1. Crumble the yeast into a mixing bowl. 2. Melt the butter and add the milk until it's hand warm. Pour over the yeast and mix until dissolved.
3. Add salt, cardamom, sugar, and most of the flour. Knead the dough until smooth and shiny. Let it rise under a cloth for 30-40 minutes.
4. Mix the filling ingredients together.
5. Turn the dough onto a work surface and add more flour if necessary.
6. Roll the dough into a 30x50 cm rectangle. Spread the filling evenly and roll it up. Cut deep slits into the surface of the roll with scissors and twist the slits alternately to the right and left.
7. Let the ring rise under a cloth for about 30 minutes until doubled in size.
8. Brush the ring with egg and sprinkle with pearl sugar on top.
9. Bake in the lower part of the oven at 200°C (392°F) for 20-25 minutes.
10. Cool the ring under a cloth.
