Ingredients:
- 2 eggs
- 1 avocado
- 1 tomato
- 2 slices of whole grain bread
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley)
Instructions:
1. Boil the eggs to your desired doneness (about 6-8 minutes).
2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper.
3. Slice the tomato.
4. Lightly toast the slices of whole grain bread.
5. Spread the mashed avocado on the toasted bread.
6. Place the boiled eggs and tomato slices on top of the avocado.
