Ingredients:
- 300 g pasta (e.g., penne or fusilli) - 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the cooking water. 2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for a few minutes.
3. Add the diced bell pepper and cherry tomatoes to the skillet. Cook for about 5 minutes until the vegetables are tender.
4. Stir in the cooked pasta and fresh spinach. Mix well and add a little reserved cooking water if the pasta feels dry.
5. Season with salt and pepper. Stir in the grated Parmesan cheese.
6. Serve immediately garnished with fresh basil.
