A hearty and flavorful pork stew that combines tender pork strips with vegetables and a rich tomato sauce. Perfect for a cozy family dinner. Preparation Time: 1 hour 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 1600 g pork strips (marinated or un-marinated or both)- 1 large onion
- 2 bell peppers (yellow and red)
- 1 large can of crushed tomatoes
- 2-3 garlic cloves
- 2 dl beef broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp chili powder (optional)
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion and garlic.2. Rinse and chop the bell peppers.
3. Heat olive oil in a large pot over medium heat.
4. Add the onion and garlic, and sauté until soft.
5. Add the pork strips to the pot and cook until they are nicely browned.
6. Stir in the bell peppers and mix well.
7. Pour in the crushed tomatoes and beef broth. Season with salt, black pepper, paprika, and chili powder.
8. Allow the stew to simmer on low heat for about 1 to 1.5 hours until the meat is tender and the flavors meld together.
9. Serve with fresh parsley on top and enjoy with rice or potatoes.
